Vegan Key Lime Pie Cookie Bites
1 (14 ounce) package firm tofu, drained
1/2 cup fresh lime juice
2 teaspoons grated lime zest
1 (8 ounce) vegan cream cheese
1 (3.4 ounce) package vanilla pudding mix
1 tablespoon honey
9 graham crackers (1 sleeve), crushed fine (1 1/4 cups)
3 tablespoons coconut oil
1 dash salt
Puree tofu, lime juice, lime zest, vegan cream cheese, pudding mix, and honey (in blender or food processor) until smooth. Chill until firm. In large sauté pan over medium heat, combine ground graham crackers, coconut oil, and salt. Heat until toasted. Set aside to cool. When ready to assemble, scoop into small bite-size balls, then toss in graham cracker crumbs. Makes 35 (about 1 ounce each).
